Roasted Spaghetti Squash a Quick and Easy Recipe

I love squash, and I really like the spaghetti version. I dont mind acorn squash but there to small to bother with and butternut squash is only around in the fall.

Simple meal plans or a simple way of eating has shown to increase your long term weight loss success. And I truly believe this, at least for me, a very simple meal plan has always given me the best results. Simply I eat one protein, on veggie and one starch carbohydrate for each meal.

 

Simple meal plans mean less hassle in preparation, less worry about what to eat and when, and more motivation to eat right. This spaghetti squash recipe is easy to make, grab and go, and delicious.

 

 

Here is what you will need…

1-2 Large Spaghetti Squash
Baking Dish
Large Spoon
Fork
Knife
Cutting Board
Olive Oil
Spices – I use salt and pepper. For a more savory version you could use garlic and paprika. But feel free to use whatever spices you want.

 

First thing is to make sure your knife is sharp, and your cutting board is ready. Then cut off each end of the squash.

 

 

Cut it lengthwise into two pieces as close to the middle as possible.

 

 

Scoop out all the seeds and goop in the middle of the squash so there is a nice clean hollowed out area.

 

 

 

Now there are two schools of thought when it comes to baking these. Some back the upside down with the rind up, and others bake them open faced with water in the baking dish.

 

 

I prefer to roast them open faced (scooped out side facing up), and then with some water in the baking dish. Place two halves in a baking dish (which ever method you prefer) and brush with olive oil and add the spices to the top.

 

 

Then bake them in the oven for about 45-65 minutes at 350-375 degrees , and when done, you can put a slight crisp on them by broiling them at 500 degrees for another 5-10 minutes. They are done when you can put a fork through them fairly easy.

 

 

Let them cool for a while because you are not quite done with them. Once they are cool take a fork and simply scrape out all of that delicious squash meat from the outer skin. Make sure you get it all out, and discard the outer skin.

 


 

So there you have it… Delicious Spaghetti Squash.

 

Easy to prepare and simple to make, this recipe will give you enough for the week. Throw a half-cup to a cup in a zipper bag or plastic container and have the ready to go when needed.
